Why the secret to incredible pizza dough is a 72-hour wait
In short: Making professional-grade Neapolitan pizza at home doesn't require complex ingredients, just patience. While you can rush the process in a few hours, the real magic happens during a long, cold fermentation in the fridge. This slow transformation is what creates the signature flavor, color, and crunch of a world-class crust.
The hallmark of a superior Neapolitan pizza lies in the fermentation process. While many home cooks find the timeline daunting, the difference in quality is significant. According to Glen and Friends Cooking, dough that has fermented for 4 or 5 hours is acceptable, but it reaches its peak potential after 24 to 48 hours. At the 72-hour mark of cold fermentation, the dough becomes truly incredible.
The chemistry of the dough relies on a specific ratio: 500g of high-protein flour (such as '00' or bread flour), 300g of room-temperature water, 15g of coarse salt, and just 5g of traditional active dry yeast. Interestingly, this traditional recipe requires no oil or sugar. While adding sugar can artificially accelerate the rise, it can actually hinder yeast growth over the long term.
To achieve this result, the process begins by combining the ingredients and letting them rest for 30 minutes before kneading for 7 to 10 minutes until smooth and elastic. Once a tight ball is formed, it must be placed in a container large enough to allow it to double in size. The dough then undergoes a cold ferment in the refrigerator for anywhere from 18 hours up to 4 days.
The final step involves timing the bake carefully. Approximately 60 to 90 minutes before you intend to bake, you should remove the dough from the fridge, divide it into three equal balls, and let them rise and warm on the countertop before shaping.
