How to cultivate a seasonal vegetable patch for the perfect winter soup
In short: A nutritious soup begins months before the pot hits the stove. By strategically planting garlic, carrots, and broad beans, you can create a continuous harvest that spans from the depths of winter through to the following spring. Mastering specific techniques for each vegetable ensures a bountiful, seasonal supply of ingredients.
Success in a soup garden relies on understanding the specific needs of each cultivar. For alliums, timing and preparation are key. Tino, a gardener at The Patch, suggests soaking garlic cloves in a seaweed solution overnight to encourage plumpness and faster germination. These should be planted 2-cm deep and 15-cm apart. For spring onions, which provide essential flavor while waiting for garlic to mature, planting in furrows with stems upright ensures a steady supply of tops.
Root vegetables like carrots (Daucus carota) require a different approach. To avoid forking, the soil must be kept light and fluffy, free of any resistance. Using seed tape—where seeds are embedded in paper—can simplify the process by removing the need for thinning, though the paper must be kept damp to break down properly. Interestingly, unlike other crops, carrots do not require fertilizer, as their deep roots can forage for nutrients deep within the earth.
Leafy greens and legumes offer more immediate rewards. Broad beans (Vicia faba) can be planted at twice the seed's depth, spaced 20-30cm apart. These are particularly versatile, as their shoots and pea-flavored flowers are edible. Meanwhile, silverbeet (Beta vulgaris cv.) provides a winter-long harvest, though it benefits from regular applications of fish emulsion. To finish the bed, parsley adds a necessary herbal note. To protect the entire patch, a thin layer of straw mulch can be used on all plants except carrots to regulate soil temperature and suppress weeds.
