How to harvest the world's most expensive spice from unassuming purple flowers
In short: Saffron is a culinary treasure worth more than gold, yet it comes from a delicate, unassuming purple flower. Producing just one kilogram of this precious spice requires an immense amount of manual labor, as hundreds of thousands of tiny red stigmas must be plucked by hand to create a single handful.
The secret to saffron lies within the Crocus sativus, a small flower with purple petals. The prize is the three-pronged, bright red stigma found inside. Because these stigmas are so fragile, harvesting must be done with extreme precision. Experts suggest picking the flowers as early as possible in the morning, while they are still upright, to protect the stigma from excessive sun exposure.
The scale of production is staggering. To yield just one kilogram of dried saffron, approximately 250,000 flowers must be processed. Even more granular estimates suggest that about 150 flowers are required to produce a single gram of the dry spice. This intensive process requires careful hand-harvesting to ensure the plant's foliage remains undamaged and the crocus can repeat its flowering in subsequent seasons.
For those attempting to grow it, the process is deceptively simple despite the spice's high value. Saffron corms thrive in a cool, temperate climate with full sun and well-drained soil, requiring night-time temperatures of five degrees Celsius or below during autumn and winter. While the plants are relatively easy to grow, they must be distinguished from the highly poisonous Colchicum, often mistakenly called 'meadow saffron'.
Once harvested, the threads require gentle drying on a baking rack with kitchen towel at room temperature for at least 24 hours. To maximize flavor, the dried threads should be infused in warm water overnight before use. This meticulous cycle of planting in late summer and harvesting in October transforms a simple bulb into a global culinary staple.
