In short: Founded in 1911, Smith's Food and Drug evolved from a modest family-run business into a major subsidiary of the national retail giant Kroger. Through decades of strategic expansion, acquisitions, and corporate restructuring, the chain transformed its footprint across the American West, eventually redefining the modern supermarket experience with its marketplace concept.

The origins of Smith's trace back to 1911, when Lorenzo Smith established a small dry goods store in Brigham City, Utah. The business underwent several transitions, including a name change to Smith & Son's Market in 1932. Following his service in World War II, Dee Glen Smith joined his father, initiating a period of rapid growth. After his father passed away in 1958, Dee Smith assumed leadership and concluded that the Brigham City market had reached its capacity, prompting a strategic shift toward regional expansion through partnerships and acquisitions.

The company's trajectory shifted significantly in the late 20th century. After going public on the New York Stock Exchange in 1989, Smith's acquired the Arizona-based Smitty's Supermarkets in 1996. By 1997, the chain was purchased by Fred Meyer for approximately $700 million. This merger was short-lived, as Kroger acquired Fred Meyer in 1998, effectively bringing Smith's under the Kroger corporate umbrella. This consolidation granted Kroger substantial economies of scale and solidified its position as a dominant force in the national grocery sector.

In the 21st century, Smith's adapted to changing consumer demands by introducing the Marketplace concept in 2004. These large-format stores function as medium-sized department stores, offering a diverse array of goods ranging from groceries and pharmacy items to clothing and household products. The company has continued to expand this model across states like Utah and Nevada, while also integrating fuel centers and loyalty programs. Today, the chain maintains its regional presence through a wide variety of private-label brands and community sponsorships, reflecting its long history of adapting to the evolving retail landscape.
