How a culinary editor transitioned from magazine stardom to a subscription empire
In short: Molly Baz rose to fame through Bon Appétit's digital content, known for her relatability and precision. However, following internal magazine controversies and staff departures, she pivoted to a direct-to-consumer model, proving that a strong personal brand could bypass traditional media gatekeepers entirely.
Molly Baz, born in 1988, began her culinary journey far from the bright lights of digital media. After studying art history at Skidmore College, she bypassed traditional culinary school to work as a line cook in Boston and New York City between 2008 and 2014. This period included working at the now-closed Picholine in Lincoln Square. Her practical experience was bolstered by a 2011 road trip through the southern United States, where she studied barbecue from pitmasters.
Her ascent in food media was tied to Bon Appétit magazine's shift toward video content around 2016. As a Senior Associate Food Editor, Baz became a face of the brand's YouTube channel, appearing in series like "Making Perfect." However, the magazine faced significant upheaval in mid-2020. Following the resignation of editor-in-chief Adam Rapoport and public accusations of discrimination by staff members of color, Baz and several colleagues departed the publication in late 2020.
Baz's subsequent career highlights a successful pivot to independent media. In November 2020, she launched "Recipe Club" on Patreon, a subscription service that gained several thousand subscribers in its first month. This model allowed her to maintain her creative output while preparing for her debut cookbook, "Cook This Book," published on April 20, 2021. The book became a New York Times Best Seller and was praised for its unconventional format and slangy lingo. She has since expanded her brand through further cookbooks, television appearances, and diverse advertising deals.
