How a mundane pie became the iconic symbol of the Florida Keys
In short: Before it was a tourism cornerstone, Key Lime Pie was just another ordinary dessert. In the early 1930s, it barely ranked among the top pies at Florida county fairs. We trace the mystery back to three documented recipes that captured a culinary identity in transition.
The transformation of Key Lime Pie from a mundane cookbook entry to a cultural icon is deeply tied to the history of the Florida Keys. Until the mid-to-late 1930s, a recipe from Florida simply calling for 'lime' was understood to mean 'Key Lime.' During this era, the pie was not the celebrated regional treasure it is today; instead, it was often overshadowed by other dessert varieties at local county fairs. This shift occurred as the region's economic landscape changed. The archipelago's development saw significant peaks during the 1890s.
Historical records from the Miami Herald provide a window into this era. In April 1933, Mrs. Mabel McClanahan of Key West shared a recipe for a 'Tropical Chiffon Lime Pie' featuring a graham cracker crust and a custard topped with meringue. By 1935, the Caribbee Colony recipe emerged, utilizing sweetened condensed milk and egg yolks, baked at 325°F for 15 minutes. This specific version required a pastry shell for the custard. It was published in the Miami Herald.
Another documented version from 1935, known as Mack’s Place Key Lime Pie, utilized a double boiler to thicken egg yolks, lime juice, salt, and sugar before folding in whipped egg whites. These early iterations highlight the fundamental components—egg yolks, lime juice, and either a graham cracker or pastry crust—that define the dessert's profile. The pie's rise to prominence coincided with the post-WWII era, as it became a central pillar of the Florida Keys' tourism-driven identity. These variations demonstrate the diverse methods used before the 1935 hurricane. This storm caused immense destruction across the islands.
