How an ice cream truck driver built a global teppanyaki empire
In short: In 1964, Hiroaki "Rocky" Aoki arrived in New York with $10,000 earned from driving an ice cream truck. He didn't just open a restaurant; he introduced a theatrical dining experience that turned chefs into performers and transformed the American landscape of Asian cuisine.
The Benihana concept, which originated in Japan in the late 1940s, centers on teppanyaki—a style of cooking on a steel griddle or "teppan." Aoki’s vision for the American market was high-drama: meals are prepared theatrically by knife-wielding, joke-telling chefs at a table surrounded by a wooden eating surface. This immersive performance helped the brand gain traction, especially after a rave review from Clementine Paddleford of the New York Herald Tribune in early 1965.
The brand's history is one of both rapid expansion and complex corporate maneuvering. After opening its first U.S. location on West 56th Street in New York City, the chain expanded to Chicago in 1968. By 1983, Aoki had spun off 11 U.S. restaurants into a separate entity, Benihana Inc., selling 49.1% to the public. This era was marked by significant legal and financial tension, including shareholder lawsuits regarding management and Aoki's control over non-U.S. locations.
Despite internal disputes and legal challenges—such as a 2004 lawsuit involving preferred stock issued to BFC Financial corporation—the brand has maintained a massive footprint. Today, Benihana Inc. is a major player in the industry, owning 68 teppanyaki restaurants and 12 franchises across the United States, the Caribbean, and parts of the Americas. In February 2024, the company was acquired by One Group Hospitality Inc. for $365 million, a deal that included its 19 RA Sushi restaurants.
