The secret to Southern-style dumplings lies in a shaggy, imperfect dough
In short: Forget the dense, rubbery lumps of your childhood. A true Southern-style chicken and dumplings relies on a delicate balance of high-heat browning, aromatic wine deglazing, and a dumpling batter that is intentionally under-mixed to ensure a light, pillowy texture.
The foundation of this dish begins with building deep flavor through boking. By searing 1.5 lb (700g) of flour-coated, seasoned chicken thighs in a large pot, you create a browned base that can be scraped into the pot to enrich the sauce. Once the chicken is browned, the process moves to aromatics: mushrooms, sliced onion whites, garlic, and carrots are simmered in a combination of an entire 750mL bottle of white wine and 32 oz (946mL) of chicken stock for approximately 45 minutes.
The true complexity, however, is found in the dumplings and the final thickening. The dumpling batter is a precise exercise in restraint. Using cake flour, baking powder, melted butter, and herbs, the dough should only be stirred with up to 237mL of milk or water until it reaches a 'shaggy, sloppy' consistency. The danger here is over-mixing; if the dough is worked too much, the resulting dumplings will become tough rather than light.
Timing is critical during the final stages of cooking. Green beans are added to the pot about 15 minutes before the dumplings are dropped in. Once the dumplings are submerged in the bubbling broth, they must steam for at least 10 minutes. You are looking for them to double in size; if they stay in too long, they risk becoming dense. To finish, a liaison of egg yolks and cream is stirred into the simmering broth. This must be done carefully—the heat should be a bare simmer to thicken the broth without making the eggs gritty. A final touch of lemon juice and reserved onion greens provides the necessary brightness to cut through the richness.
