Why Christmas dinner looks different from Tokyo to Warsaw
In short: While a roast turkey or ham is a common Western staple, Christmas flavors vary wildly across the globe. From spiced pickled herring in Scandinavia to meat-free beetroot soups in Poland, holiday traditions are shaped by local history, religious customs, and regional ingredients.
In many cultures, Christmas meals are defined by specific religious observances or historical influences. For example, in Poland, the Christmas Eve dinner is traditionally a meat-free feast consisting of 12 dishes. Signifying the twelve months plus the twelve apostles, this figure holds symbolic weight. A centerpiece of this meal is barszcz, a vibrant beetroot soup made by simmering raw beets in vegetable stock with vinegar and garlic. It is often served with uszka, which are small dumplings filled with mushrooms.
Other regions blend colonial history with local flavors. In Goa, India, Christmas traditions are heavily influenced by four centuries of Portuguese rule. Meanwhile, in the Philippines, the holiday is marked by bibingka, a rice-flour cake made with coconut milk, butter, and eggs. This dish is traditionally cooked in a clay pot lined with banana leaves over hot coals, often topped with cheese and salted duck egg after Midnight Mass.
Geography also dictates unique preservation methods. In Denmark, herring is a year-round staple, but the holiday version, julesild, is specifically pickled and spiced with cinnamon, cloves, and sandalwood. In contrast, some regions focus on hearty, spicy stews served with fermented flatbreads or boozy rice cakes to break the Advent fast. These diverse plates—ranging from Japan's KFC feast to Mexico's bacalao—illustrate how a single holiday can manifest in nearly infinite culinary forms.
