The secret to professional focaccia lies in a slow, cold fermentation
In short: Forget the quick rise. To achieve deep, complex flavor in your homemade focaccia, the real work happens in the refrigerator. By extending the rise time, you transform a simple dough into a savory masterpiece, finished with a garlic-herb butter infusion.
Achieving a high-quality focaccia requires more than just flour and water; it demands a specific ratio and a patient approach to fermentation. For a standard dough, the foundation is built around the amount of water used. For every 237mL (one cup) of water, the recipe calls for a teaspoon each of salt, honey, and dry yeast, along with approximately 30g of grated pecorino or another hard grating cheese. The flour composition is equally specific: for every cup of water, incorporate one large spoonful of cornmeal and two large spoonfuls of whole wheat flour, adding just enough bread flour to bind the mixture into a cohesive dough.
The flavor profile is significantly enhanced by the method of rising. While the dough can rise at room temperature for a few hours, placing it in the refrigerator for one to two days allows for a longer fermentation process, which results in a superior taste. During this time, the dough may not appear to rise significantly, but the chemical development is crucial. Before baking, the dough should be stretched and folded several times to build strength, ensuring it can hold its structure once it becomes puffy.
The final stage involves high-heat baking and a meticulous finishing process. After letting the dough rise in a heavily oiled pan for one to two hours, the surface should be docked with fingertips and topped with a crunchy finishing salt, such as Maldon smoked sea salt. Bake the bread at 400ºF (200ºC) until the top is very brown and the texture feels like a stiff spring—a process that can take as little as 15 minutes. To prevent a soggy base, slide the bread onto a cooling rack immediately after baking to let the bottom steam out. The final touch is brushing the warm bread with a mixture of melted butter, garlic, and fresh herbs, such as rosemary or sage, to lock in the aromatics.
