In short: Fabio Viviani began his culinary journey in a local bakery at age 11. By 27, he had already built a small empire of restaurants and nightclubs in Florence. After moving to California, he transformed from a local restaurateur into a national television personality and prolific cookbook author.

Born in Florence in 1978, Viviani entered the restaurant industry early, working at Il Pallaio trattoria by age 14 and becoming a sous chef two years later under mentor Simone Mugnaini. His early entrepreneurial success was significant; before leaving Italy, he owned seven restaurants, a farmhouse, and two nightclubs. In 2005, he relocated to Southern California, where he established Café Firenze in Moorpark and Firenze Osteria in North Hollywood.

Viviani gained widespread recognition in 2008 as a contestant on the fifth season of Top Chef, where he finished in fourth place and earned the title of fan favorite. This exposure launched a second career as a television host and product pitchman. He later appeared on Top Chef: All Stars in 2010 and starred in the 2012 series Life After Top Chef. His media presence expanded through a Webby Award-winning web series, Chow Ciao, and numerous guest appearances on programs like Good Morning America and QVC.

Beyond television, Viviani has authored several cookbooks, including the New York Times bestseller Fabio's Italian Kitchen, and maintains a digital presence through his website and e-magazine. His business ventures have been vast, ranging from corporate lunch spots in Chicago to partnerships in Oklahoma City and beyond. While his career has seen immense growth, it has also faced challenges, including the 2020 decision to sever ties with the Nocturnal Hospitality Group in Tampa following public controversy involving an employee's conduct. Today, his portfolio continues to evolve with new concepts like Jars and various regional Italian restaurants.
