In short: You do not need a tandoor or rising yeast to achieve perfect, bubbly naan. Using a well-seasoned cast iron skillet and a few clever heat management techniques, you can create soft, garlic-studded flatbread right on your stovetop.

Traditional naan often relies on yeast and high-heat ovens, but a tawa-style method offers a streamlined alternative. Using a no-yeast recipe, you can produce four individual naans by combining 250g of all-purpose flour with 1 teaspoon of double-acting baking powder. The dough's texture is shaped by adding 100mL of milk or water and 60g of yogurt—ideally containing live cultures—until the mass is soft, springy, and only slightly sticky.

The secret to the texture lies in the resting and cooking process. After kneading, the dough ball should rest for at least thirty minutes, though several hours is ideal to allow for potential fermentation from the yogurt cultures. When ready to cook, roll the dough nearly to its thinnest point, rolling grated garlic and chopped cilantro into the surface. A crucial step involves flipping the dough and lightly wetting the bottom side with water before it hits the pan.

Cooking requires precise heat management in a well-seasoned cast iron skillet. Once the wet side is pressed into the medium heat, you should see bubbles forming within two minutes as the edges dry. To finish, you can invert the pan over the burner to brown the top, or simply flip the naan over to cook directly on the pan. The goal is to brown the peaks until they just begin to burn, while ensuring much of the surface remains doughy. Finally, brushing the hot bread with melted butter completes the dish.
