In short: Most store-bought cream cheese is a mystery of industrial processing, but the fundamental chemistry is surprisingly simple. By combining specific dairy fats with precise bacterial cultures and enzymes, you can transform basic ingredients into a rich, spreadable cheese right in your own kitchen.

Making cream cheese from scratch requires a delicate balance of fats and acidity. The process begins by heating 3 liters of whole milk—specifically avoiding ultra-pasteurised varieties—and 400 mL of 35% heavy cream to exactly 86ºF. Once heated, the mixture is fortified with 1 mL of calcium chloride and a single packet of C21 buttermilk culture. After a brief five-minute rest, a few drops of single strength liquid rennet are stirred in to initiate the transformation.

The magic happens during a lengthy ripening phase. The mixture must sit at room temperature for 12 to 24 hours until the curd separates from the liquid whey. You will know the batch is ripe when you see whey on the surface and the pH level measures between 4.9 and 5.1. During this period, the curds should be stirred three or four times to ensure effective drainage.

Once ripe, the mixture is transferred to a cheesecloth-lined colander to drain for approximately two hours. To achieve the final consistency, the curds are hung in the cloth for an additional 10 to 20 hours. The final yield is roughly 1 kg of fresh cheese. Because this is a fresh product, it should be stored in a sealed container in the fridge and consumed within one week. It is vital to distinguish between UHT milk, which requires refrigeration, and shelf-stable aseptic milk, as only the former is suitable for this recipe.
