🔵 How To Make Maple Brined Pork Chops · 8:41 · Video: Glen And Friends Cooking · Watch at the source

In short: This video demonstrates how to use a simple maple brine to infuse flavor and help pork chops retain moisture. You will learn the ideal brining duration and the best method for roasting them to perfection.

Brining is a technique used to season meat deeply while helping it retain a juicy interior during the cooking process. This method works effectively whether you choose to pan-roast or oven-roast the chops.

To prepare the brine, combine 50g of sugar, 125mL of maple syrup, 15mL of Dijon mustard, and 15mL of juniper berries in a pot, bringing the mixture to a boil until the solids dissolve. For extra flavor, you may optionally include a thumb of chopped ginger or branches of fresh thyme. Once cooled in a nonreactive container, the chops should soak for 6 to 8 hours, though they should not exceed 12 hours. After patting the meat dry, sear it in a hot oven-proof pan before finishing in a 230ºC oven until the center reaches 275ºF.
