In short: Panettone is a notoriously challenging bread to master. Because it contains such high levels of sugar and butter, the dough rises very slowly and is highly prone to failure. However, if you can navigate these pitfalls, you will be rewarded with an amazing, sweet Italian treat.

Creating a successful panettone requires patience and a specific sequence of steps to manage its heavy dough. The process begins the night before baking by combining day one ingredients—including flour, yeast, milk, and egg yolks—to form a shaggy dough. This mixture must sit covered at room temperature for 12 to 14 hours to hydrate properly before the main mixing begins.

Once hydrated, the dough requires intensive kneading to achieve the necessary structure. After initial mixing, you must add sugar and salt on low speed, followed by a medium-high speed knead to create a stretchy, elastic ball. The most delicate stage involves incorporating 150g of room-temperature unsalted butter. This step alone can take between 12 and 15 minutes of mixing on low speed, and you must add the butter in small pieces to ensure it is fully integrated without leaving the dough feeling greasy.

After the butter, extracts, candied peel, and raisins are incorporated, the dough must proof in a warm, humid environment. This second rise can take anywhere from 6 to 10 hours, depending on your kitchen temperature, until the dough fills about 2/3 of the 6-inch mould. Before baking, a pat of butter should be slipped into a slash in the top of the loaf.

The final stage involves baking in a preheated 180ºC (350°F) oven for approximately 40 to 45 minutes. You are looking for a deep, golden brown crust and an internal temperature of at least 185°F. Once removed from the heat, the bread must cool for at least 2 hours before it is ready to be sliced and enjoyed.
