How to transform sourdough discard into a decadent cinnamon coffee cake
In short: If you have sourdough starter sitting on your counter, you know the struggle of what to do with the leftover discard. Instead of throwing it away, you can use it to create a soft, tangy cake with caramel-like bits in the center.
Sourdough starter is often treated as a byproduct of bread making, frequently referred to as 'discard' or 'cast off.' While many bakers struggle with how to utilize this leftover starter, it serves as a powerful flavor enhancer in desserts. In this specific coffee cake recipe, the sourdough starter acts as a substitute for a sour acid component, such as sour cream or yogurt, providing a distinct tang and contributing to a soft, pleasant texture. This method ensures that no part of your baking process goes to waste. It is a clever way to repurpose ingredients that might otherwise be discarded.
The chemistry of the cake relies on a combination of leavening agents and flavor profiles. While the yeast in the starter does not provide the primary leavening for this cake, the lactobacillus within the starter significantly elevates the flavor profile. To achieve the best results, the dry ingredients—including all-purpose flour, salt, baking soda, cinnamon, and nutmeg—should be stirred together before being combined with the wet ingredients. Nutmeg is a particularly recommended addition to the spice blend. It pairs exceptionally well with cinnamon to enhance the overall aroma.
The process involves creaming butter and sugar together before adding an egg and vanilla extract. Once the sourdough starter is incorporated, the flour mixture is stirred in. The cake is finished with a topping made from brown sugar, flour, cinnamon, and butter, which is sprinkled over the batter. After baking in a 9-inch pan at 180ºC (350ºF) for approximately 30 minutes, the topping sinks into the cake, creating rich, caramel-like morsels in the middle of the crumb. For optimal results, use a non-stick pan lined with parchment paper. This prevents sticking and makes it much easier to remove the finished cake.
