Ordering a latte in Italy might just get you a glass of milk
In short: The humble latte is often misunderstood by travelers. While it remains a global coffee staple, its linguistic roots and preparation methods vary wildly between the streets of Milan and American cafes. From simple milk to complex microfoam, understanding these cultural nuances is key to navigating international coffee menus.
In Italy, 'latte' is simply the everyday word for milk. Consequently, if you order a 'latte' in an Italian cafe without specifying coffee, you will likely be served a plain glass of milk. The English term actually derives from 'caffè latte' or 'caffè e latte', which translates to coffee and milk.
The modern caffè latte as we know it is a relatively recent invention, emerging in the 20th century. Its existence relies on the 19th-century invention of the espresso machine and, specifically, the addition of the steam wand in 1903. This technological leap allowed baristas to heat milk and create 'microfoam'—milk with very fine bubbles that change both the texture and taste of the drink.
A caffè latte is distinguished from a cappuccino by its proportions and presentation. While a cappuccino is served in a small 140 mL cup with a thick layer of foam, a caffè latte is typically served in a larger 230 mL glass or cup without that heavy foam top. This makes it much milkier and the coffee flavor significantly milder.
Cultural habits surrounding the drink also differ by geography. In Italy, milky coffees like lattes and cappuccinos are traditionally reserved for breakfast. Conversely, in the United States, a latte is frequently served as an all-day beverage and is often heavily sweetened with refined white sugar (3% or more), artificial sweeteners, or agave syrup.
