How to master the art of the smoked meatloaf and potatoes

Forget the oven. By using indirect heat and a smoker, you can transform humble ground meats, potatoes, and greens into a deeply flavorful, smoky feast. This method relies on temperature control and careful rotation to ensure every component reaches perfection.

The foundation of this smoked meatloaf lies in a hearty, high-fat blend of meats. A classic preparation uses one pound each of ground beef, ground lamb or mutton, and raw sausage meat, such as Italian-style pork. To ensure the loaf holds its shape and remains flavorful, the meat is combined with grated carrots, onion, eggs, breadcrumbs, and a generous amount of BBQ sauce and seasonings. A critical step for the home cook is to microwave a small test ball of the mixture first; this allows you to taste the seasoning and adjust the spices before the entire loaf is committed to the smoker.

The smoking process requires managing two different heat zones. The meatloaf should be cooked over indirect heat at approximately 230ºF (110ºC) until it reaches an internal temperature of 160ºF (71ºC). In contrast, the potatoes—which should be pierced to release steam and coated in oil—benefit from direct heat to help them soften. Because the potatoes often require more time, the cook must rotate both the loaf and the potatoes halfway through the process to ensure even cooking. In practice, the meatloaf may take nearly two hours, while the potatoes can take up to three.

Completing the meal involves simple, rustic sides. The greens, such as kale, are simmered in a small amount of water, salt, pepper, and perhaps the resting juices from the meat, until tender. The smoked potatoes should be halved and served with salt and butter on the flesh side, though the skins may be too blackened to enjoy. When plated, the meatloaf is finished with a garnish of BBQ sauce, creating a cohesive, smoky dish.
