Why do the fish in this traditional Cornish pie stare at the stars?
In short: Stargazy pie is a Cornish delicacy featuring whole pilchards baked beneath a pastry crust. The fish heads are intentionally left protruding through the top, creating the illusion that they are gazing upward. While some find its appearance unsettling, the design serves a practical purpose: it ensures the fish remains moist.
The dish originates from the fishing village of Mousehole, Cornwall, where it is central to the annual celebration of Tom Bawcock's Eve on 23 December. According to local legend, a 16th-century fisherman named Tom Bawcock braved a severe winter storm to secure a catch that saved the village from starvation. The entire haul, said to include seven different types of fish, was baked into a massive pie. The heads were left poking through the crust as proof that the pie was indeed filled with fish.
While the legend is a cornerstone of Cornish identity, its origins are debated. Morton Nance, writing in 1927, suggested the story might be a corruption of the name Beau Coc and speculated that the festival could have pre-Christian roots. Others have dismissed the entire tradition as a 1950s fabrication by the landlord of The Ship Inn, though historical records of the festivities predate this claim. Regardless of its provenance, the pie remains a symbol of Cornish resilience and culinary eccentricity, famously cited in folklore as the reason the Devil never dared to cross into Cornwall, fearing he might end up in a pie himself.
Modern culinary interpretations have evolved, though the core requirement remains the protruding head. The positioning of the fish allows natural oils to drain into the pie during baking, enhancing the flavor. While pilchards are the traditional choice, chefs often substitute mackerel or herring, and some recipes incorporate ingredients like bacon, hard-boiled eggs, or white wine. Whether viewed as a whimsical cultural icon or a challenging culinary curiosity, the stargazy pie continues to be celebrated in literature, music, and television, serving as a tangible link to Cornwall's maritime heritage.
