The dessert you love once started as a bloody survival meal

The History of Pudding — The Dessert That Was Once Made of Blood · 11:54 · Video: MOHAMMED SHAKIB · Watch at the source

In short: Before it was a creamy Victorian treat, pudding was a savory staple of necessity. For millennia, the word described a mixture of animal blood and fat boiled in offal. It is a culinary journey from ancient battlefields to modern dinner tables, driven by scarcity and human ingenuity.

The etymology of 'pudding' reveals its visceral origins. The term evolved from the Old French word 'boudin,' which translates to 'small sausage.' This, in turn, traces back to the Latin 'botellus,' meaning 'small intestine.' For thousands of years, a pudding was not a sweet confection but a functional way to utilize every part of a slaughtered animal.

The earliest literary evidence for this dish appears in Homer's Odyssey, dating back to the 8th century BC. In this epic, blood pudding is described as being roasted inside a pig's stomach. Throughout medieval Europe, these were hearty survival foods composed of blood, suet, and grains. They served as essential sustenance rather than luxury items, reflecting a period where minimizing waste was a matter of life and death.

The transition toward the modern dessert began in the 14th century. As ingredients like beef, mutton, raisins, currants, prunes, and wine were incorporated into the blood-based porridge, the flavor profile started to shift. The availability of sugar eventually facilitated the rise of sweet versions, culminating in the Victorian era when pudding fully transformed into the beloved dessert recognized today.

Despite this evolution, the original blood-based tradition persists in niche culinary forms. Black pudding remains a staple of British and Irish breakfasts. Even more surprising is 'sanguinaccio dolce,' an Italian sweet cream made with pig blood and dark chocolate, which was enjoyed until 1992 when public blood sales were banned.
