Can milk and butter transform a simple roast chicken dinner?
In short: This video recreates Jamie Oliver's recipe for a succulent whole chicken. By searing the bird in butter and finishing it in a bath of milk and lemon, you can achieve incredibly moist meat with a delicate, subtle flavour.
The process begins by coating a 1.5 kg chicken in olive oil, salt, and pepper before searing it in a cast iron Dutch oven. To achieve a golden skin, the cook must remove and replace the butter halfway through the searing process to prevent it from burning.
The final stage involves adding garlic, lemon zest, sage, and a cinnamon stick to the pot. After pouring milk and lemon juice over the bird, the chicken roasts for approximately one hour until fully cooked.
