The patient art of growing the knobbly, delicious celeriac

Seed to Harvest Celeriac through 7 Months (No Dig Guide) · 21:45 · Video: Charles Dowding · Watch at the source

In short: Celeriac is far from a beauty contest winner, but this slow-growing stem offers a substantial autumn harvest. Success requires a seven-month commitment to precise timing, careful moisture management, and a deep respect for the long growing season ahead.

While it resembles a pale, knollby swede, the edible portion of celeriac is actually a swollen stem. Because it is a long-season crop requiring at least six months to mature, timing is everything. The journey begins in mid-March with the sowing of tiny, light-germinating seeds indoors to protect them from early cold. By early May, these young plants are ready to be transplanted into the garden, ideally in a sunny or lightly shaded spot with rich, moisture-retentive soil.

The secret to a heavy harvest lies in managing water and space. To allow the bulbs to swell properly, plants should be spaced at approximately 35cm intervals. While the crop thrives in consistently damp soil, gardeners must be strategic: avoid overwatering in early summer to prevent soft growth and the risk of septoria in autumn. Instead, increase moisture levels later in the season as the bulbs expand. For those practicing no-dig gardening, applying a compost mulch on the surface helps retain this vital moisture and feeds soil life.

As autumn approaches, the harvest begins in October and November. The roots can reach a significant size, weighing between 800g and 1kg. It is vital to harvest before winter truly sets in to prevent leaf disease from spreading into the bulb. Once harvested, celeriac is incredibly hardy; it can be stored in boxes in a cool shed for winter meals, where it can be grated into salads, roasted, or mashed like a potato.
