In short: The potato chip is a global snack staple, but its origin story is rooted in a moment of professional frustration. In 1853, a cook named George Crum allegedly invented the crispy treat after a demanding customer repeatedly rejected his fried potatoes for being too thick, sparking a salty, crunchy revolution.

The invention of the potato chip is widely attributed to George Crum, born George Speck in 1824 to an African American father and a Huron mother. While working at Moon’s Lake House in Saratoga Springs, New York, in 1853, Crum faced a customer who complained that his fried potato slices were too thick. After several failed attempts to satisfy the diner with thinner cuts, an annoyed Crum decided to slice the potatoes so thin and fry them until they were so crisp they could not be eaten with a fork.

To Crum's surprise, the customer was delighted by the crunchy disks. The dish, initially dubbed Saratoga chips, gained traction in New England restaurants. By the late 1800s, entrepreneurs like William Tappenden began mass-producing them for grocery stores. However, early retail methods were flawed; chips were sold from large barrels or glass containers, often leaving the bottom of the batch stale and broken by the time they reached the customer.

The industry transformed in 1926 when Laura Scudder, a businesswoman, nurse, and lawyer, pioneered a method of fusing waxed paper into bags to preserve freshness. This innovation paved the way for cellophane and glassine packaging. By the 1920s, mechanical peelers and continuous fryers enabled large-scale production, and in the late 1930s, Herman Lay successfully marketed his brand nationwide. Today, the market includes everything from traditional fried or baked slices to uniform snacks like Pringles, which are crafted from dried potato flakes and dough.
