The humble coffee bean is actually a seed, and it is not a bean at all.
In short: Coffee beans are the seeds of the Coffea plant, typically found in pairs inside a fruit called a coffee cherry. While they are a global staple and a major cash crop, they are botanically distinct from true beans. Their complex chemical makeup transforms entirely during the roasting process to create coffee.
The coffee plant produces fruits known as coffee cherries, which usually contain two seeds pressed together. These seeds are called beans due to their shape, though they are not true beans. Occasionally, a cherry contains only one seed, known as a peaberry. While some claim peaberries offer a superior flavor profile, there is little hard evidence to support this, as they may simply be selected from higher-quality harvests.
Coffee plants thrive within the 'bean belt,' an area between the tropics of Cancer and Capricorn. The two primary commercial varieties are arabica, which accounts for about 60% of global production, and robusta, which makes up 40%. These plants are sensitive to their environment; arabica typically requires cooler temperatures of 15 to 24 °C, while robusta prefers warmer conditions between 24 and 30 °C. The chemical composition of the bean, including its caffeine, alkaloids, and fatty acids, varies based on these growing conditions and the altitude at which the plant is cultivated.
The transformation from a raw, green seed to a roasted coffee bean is a complex chemical process. Green beans are rich in carbohydrates, proteins, and lipids, which protect the seed from pests and oxidation. During roasting, these compounds degrade and react. For instance, free amino acids and sugars undergo the Maillard reaction to produce the characteristic aroma and bitterness of coffee. By the time beans are roasted, most free amino acids are gone, replaced by bitter-tasting diketopiperazines. This delicate balance of chemistry is why coffee remains one of the world's most significant and studied agricultural commodities.
