Why oxygen is a nutrient that nutritionists often ignore
In short: We treat food as fuel, but we often overlook the most fundamental chemical requirement for life. While not typically listed on dietary guidelines, oxygen is the essential driver of cellular respiration. Without it, the complex chemistry of our bodies simply grinds to a halt.
In the field of nutritional science, substances are generally defined by how they enter the body. Because humans and other terrestrial animals inhale gaseous oxygen through the nose and lungs rather than consuming it via the gastrointestinal tract, nutritionists do not traditionally classify it as a nutrient. However, this distinction is increasingly viewed as arbitrary. By the Oxford English Dictionary's definition—a substance providing nourishment for life maintenance and growth—oxygen unambiguously qualifies.
The biological necessity of oxygen is centered in the mitochondria. It is required for oxidative phosphorylation and aerobic cellular respiration, processes that allow cells to accept electrons and generate energy. When oxygen levels drop, known as hypoxia, the body must pivot its metabolic strategy. Cells switch from efficient oxidative metabolism to anaerobic glycolysis, which relies on increased glucose utilization. This shift triggers significant changes in gene expression, specifically driven by hypoxia-sensitive transcription factors like hypoxia-inducible factor-1 (HIF-1).
The consequences of oxygen deficiency are diverse and profound. While it is a common challenge at high altitudes or during deep-sea dives, localized low pO2 can affect specific tissues like the brain and retina. Furthermore, overt hypoxia is linked to ischemic disease, tumors, and even white adipose tissue in cases of obesity. Because oxygen is both critical for life and potentially toxic due to the generation of reactive oxygen species, it represents a complex, overlooked pillar of nutritional science.
