The secret to perfect sushi rice lies in how you handle the steam

In short: Making sushi rice is more than just boiling grains. From the precise washing technique to the specific wooden tools required, achieving that signature glossy finish requires a delicate balance of temperature control and moisture management to ensure every grain remains distinct and bright.

The foundation of sushi rice begins with the preparation of Japanese short-grain rice. The process starts with washing the grains repeatedly until the water runs nearly clear, removing the excess starch that turns the liquid milky. When cooking in a pot, use a 1:1 ratio of rice to water. After bringing the pot to a boil on high heat, reduce to low for 20 minutes, then allow the rice to steam for an additional 10 minutes. Crucially, the lid must remain undisturbed during this period; peeking or stirring can disrupt the cooking process.

Once cooked, the rice is seasoned with a mixture of rice vinegar, sugar, and salt. This mixture should be heated only until the solids dissolve, as boiling it too long will evaporate the essential vinegar flavor. For the best results, transfer the hot rice to a hangiri—a traditional wooden tub. The natural wood is functional, as it absorbs excess moisture from the rice. If a hangiri is unavailable, an unfinished wooden salad bowl is a suitable alternative, though metal bowls can be used if necessary.

The final stage is about texture and temperature. As you pour the vinegar over the rice, use a wooden spoon to 'cut' and turn the grains rather than mashing them, ensuring each grain stays individual. To achieve a shiny appearance, you must dissipate the steam quickly. This can be done by fanning the rice for three or four rotations, ideally with a second person assisting. Once the rice reaches room or body temperature, cover it with a damp towel to prepare it for assembly.
