In short: Move beyond traditional citrus spreads with this unexpected recipe. This video demonstrates how to combine grated carrots with citrus and ginger to create a unique, shelf-stable preserve.

The process begins by simmering grated carrots with ginger, orange and lemon zest, citrus juices, and water in a non-reactive pan for 15 to 30 minutes. After adding vinegar and sugar, the mixture is boiled for approximately 20 to 30 minutes until it reaches a set point of 105ºC (220ºF).

Once transferred to sterilized jars and processed in hot water for 15 minutes, the marmalade can be stored for up to 24 months. For those without canning equipment, the recipe also works as a freezer jam.
