Can roasted carrots transform a simple lemon ice cream base?
In short: After viewers requested a carrot-based alternative to a previous lemon recipe, this video demonstrates how to modify a base to create a rich, maple-infused carrot ice cream from scratch.
The process begins by roasting approximately 250g of chopped carrots tossed in 30 mL of maple syrup at 240ºC (475ºF) until they caramelise and lose most of their water. This roasted vegetable base is then blended with 300 mL of sweetened condensed milk until smooth.
To finish the mixture, the carrot blend is whisked into a combination of 500 mL of 35% heavy cream and 30 mL of vinegar, such as apple cider vinegar, before being frozen according to the ice cream maker's instructions.
