How to transform frozen peas into a luxurious, velvety pasta sauce

You do not need a complex recipe to achieve gourmet results. By using a simple chemical trick with lemon juice and heavy cream, you can create a thick, bright, and incredibly creamy sauce that elevates humble frozen peas into a sophisticated dinner.

The secret to this dish lies in the controlled curdling of heavy cream. By adding a small amount of lemon juice—roughly a teaspoon—to 1/2 cup (1/2 cup/118mL) of heavy cream, the acid causes the cream to thicken almost instantly. While using more juice, such as the juice of half a lemon, creates a much more tart profile, a minimal amount provides the necessary structure for a luscious sauce without overpowering the palate.

Texture can be achieved through two distinct methods: mechanical or manual. If using a food processor, you can puree garlic, peas, the lemon-cream mixture, herbs, and cheese into a smooth consistency, perhaps reserving a few whole peas for contrast. Alternatively, a more rustic approach involves finely chopping garlic with coarse salt, hand-mashing the peas to pop their skins, and stirring them into the cream with chopped herbs and plenty of grated parmesan or pecorino.

To complete the dish, the sauce is integrated using only the residual heat of the pasta. This prevents the sauce from breaking or losing its emulsion. For the best results, use a pasta shape designed to hold significant sauce, such as 1/2 lb (227g) of a sturdy variety. If the sauce becomes too thick, a splash of reserved, starchy pasta water can loosen it. For an added layer of texture, toasted panko breadcrumbs, browned in butter, provide a crisp garnish that complements the creamy base.
