The secret to restaurant-quality risotto lies in the mushrooms' transformation
In short: Most home cooks treat risotto as a simple one-pot affair. However, elevating the dish requires a dual approach: a deeply infused mushroom stock and a precise technique for browning fresh fungi to create a rich, syrupy finish.
The foundation of a premium risotto begins long before the rice hits the pan. By simmering dried mushrooms with bay leaves and salt in approximately 473mL of water per portion for 30 to 60 minutes, you create a concentrated essence. This stock serves as the primary liquid for the rice, providing a depth of flavor that water alone cannot achieve. If the dried mushrooms contain sand, the liquid can be clarified using a coffee filter or by carefully decanting the top layer.
The texture of the dish depends on the treatment of two distinct types of fresh mushrooms. Larger varieties, such as king trumpet, should be marinated in olive oil, vinegar, and seasoning, then pan-seared in a thick layer of oil. For a more decadent finish, one might use butter during the basting stage. These larger pieces should be cooked until they have shrunk by at least one third, using crushed garlic cloves to baste the fungi in hot, aromatic fat.
The rice itself—idegarborio, vialone nano, or canaroli—requires a specific sequence. After frying diced shallots and mustard seeds, the dry, unwashed rice is toasted before being deglazed with white wine or a splash of white balsamic vinegar. As the stock is added gradually over 15 to 20 minutes, the grains should remain slightly crunchy. Finally, smaller mushrooms are sautéed in the remaining flavorful oil and deglazed with a spirit like cognac to create a glossy syrup that coats the entire dish.
