Is Southern corn pudding a bread, a cake, a custard, or a casserole?
In short: Southern corn pudding defies easy categorization, blending elements of custard, bread, and casserole into a single dish. This video breaks down the preparation of this classic side, demonstrating how simple pantry staples like creamed corn and cornmeal transform into a golden, savory-sweet delight perfect for a crowd.
The dish sits in a culinary gray area, functioning as a side that bridges the gap between a dense cornbread and a delicate custard. The base relies on a mixture of creamed corn, sweetened condensed milk, and cornmeal, which creates a loose, pourable batter. By adjusting the ratio of cornmeal, cooks can shift the final texture from a bread-like consistency to something more akin to a soft pudding. The inclusion of baking powder ensures a slight lift, while melted butter or rendered turkey fat provides the necessary richness to bind the ingredients during the thirty-minute bake time at 375ºF.
Beyond the core custard, the recipe incorporates fresh elements to balance the sweetness. Green onions, fresh corn kernels, and sliced chilies are used both within the batter and as a textural topping. The method is straightforward: combine the wet and dry ingredients until smooth, pour into a greased 9x13 inch baking dish, and bake until the surface turns golden and the center sets. It is a versatile preparation, designed to serve eight people, that highlights how regional comfort food often relies on the clever manipulation of simple, shelf-stable components.
