Before it was a sweet treat, chocolate was a spicy currency

In short: Modern chocolate bars are a far cry from their ancient origins. For thousands of years, cacao was not a dessert but a bitter, spicy beverage used by warriors and served as a form of money. Its journey from rainforest currency to a global luxury involves a radical chemical transformation.

Chocolate's history begins over 3,500 years ago in Central America. The Mayans and Aztecs were the primary early consumers, though they did not eat chocolate as a solid bar. Instead, they consumed it as a drink, mixing cocoa beans with ingredients like vanilla or chili peppers. During this era, cacao beans were so highly valued that they functioned as a form of currency.

The geographical heart of cacao production has shifted significantly over time. While it was first grown in Ecuador—which held the title of the world's top producer for a long period—the modern landscape is different. Today, more than 70 percent of the world's cocoa beans originate from West Africa, though the trees still thrive in tropical forests from South America to Indonesia.

The transition from a bitter drink to a sweet confection was primarily driven by the addition of sugar. The manufacturing process is labor-intensive: pods are hand-picked and fermented for up to five days to develop flavor, then sun-dried for about 14 days. After roasting, the beans become 'nibs.' These are ground into a semi-solid paste called cocoa liquor, which is then cooked and mixed with milk and sugar for hours or even days to reach its final form.

The physics of chocolate is equally precise. The final product is designed to melt at exactly 34ºC. This delicate balance of processing—from fermentation to the final grinding of nibs—ensures that the complex flavors developed in the tropical rainforests are preserved in the modern chocolate bar.
