In short: In 1948, post-war meat rationing forced a Leicester butcher to pivot to potatoes. Today, that gamble has transformed Walkers into a snack titan, producing over 11 million bags of crisps every single day from a single massive production plant.

The evolution of Walkers is a study in adaptation. Founded in 1948 by Henry Walker, the company emerged from a butcher's shop in Leicester, England. When post-war meat rationing caused production to drop, managing director R.E. Gerrard shifted the focus toward hand-sliced and fried potatoes. This pivot proved remarkably successful; by 1989, the company was under the ownership of PepsiCo, and it has since grown to become the largest crisp manufacturer in Britain.

The scale of modern production is immense. The Leicester factory is the largest crisp production plant in the world, churning out more than 11 million bags of crisps daily using approximately 800 tons of potatoes. The process is highly efficient; from the moment raw potatoes arrive at the factory to the point they leave the dispatch bay, a single bag takes about 35 minutes to complete.

Flavor innovation has also been driven by scientific advancement. While early crisps were sold plain with separate salt sachets, the 1950s saw a revolution. Following the 1952 Nobel Prize-winning work of Archer Martin and Richard Synge on partition chromatography, food scientists began using gas chromatographs to decode complex chemical compounds. This allowed for the development of iconic flavors like Cheese and Onion, launched in 1954, and Salt and Vinegar in 1967.

The brand has faced various modern challenges, from environmental concerns regarding plastic pollution to legal disputes over taxation. In 2024, Walkers took HM Revenue and Customs to a tribunal over VAT on its Sensations Poppadom range, arguing the product was not a potato crisp. The tribunal ultimately ruled in favor of the tax authorities, a decision Walkers appealed to a higher tribunal in 2025.
