In short: Born in 1925, Jiro Ono transformed the culinary world from a humble apprentice to the proprietor of Sukiyabashi Jiro. Renowned for his innovative techniques, he has served world leaders and inspired global audiences. Yet, even as he reached his centennial, his primary concern remains the preservation of traditional sushi ingredients.

Jiro Ono, born on October 27, 1925, in Tenryū, began his journey in the food industry at the age of seven. After moving to Tokyo to pursue an apprenticeship, he achieved the status of a qualified sushi chef in 1951. By 1965, he established his own restaurant, Sukiyabashi Jiro, located in the Ginza district of Tokyo. Over the decades, his dedication to his craft earned him a reputation among his peers as one of the greatest living sushi craftsmen, with his specific methods influencing modern preparation styles.

The restaurant gained international fame, notably through the 2011 documentary Jiro Dreams of Sushi, directed by David Gelb. Its prestige grew as Ono served high-profile guests, including former Japanese Prime Minister Shinzo Abe and former United States President Barack Obama. Obama famously remarked that the meal he experienced was the finest sushi he had ever consumed. Despite this acclaim, the Ono family faces significant challenges regarding the future of their trade, specifically expressing fears that the ongoing issue of overfishing will lead to the disappearance of essential ingredients required for traditional sushi.

As of 2023, Ono has transitioned away from the daily management of Sukiyabashi Jiro due to health concerns, with his son Yoshikazu taking over primary operations. Both of Ono's sons, Yoshikazu and Takashi, followed in his footsteps as sushi chefs, with Takashi managing his own Michelin-starred establishment. On October 27, 2025, Ono celebrated his 100th birthday. Demonstrating his lifelong commitment to his profession, he expressed a desire to continue working and crafting sushi during the lead-up to his centennial on Respect for the Aged Day in September 2025.
