Climate change is turning staple crops into toxic hazards
In short: Droughts and rising temperatures are doing more than just reducing yields; they are actively altering the chemical safety of our food supply. This lecture explores why global warming makes agricultural toxins a pressing security threat.
Professor Jacqueline McGlade examines how environmental stress triggers dangerous biochemical shifts in plants. While over 80 plant species are known to cause poisoning through nitrate accumulation, droughts are now exacerbating this risk for many staple crops. Even after water-stressed plants begin to grow again, they can build up significant levels of other toxins.
The lecture also highlights the expansion of mycotoxins due to global warming. It is estimated that 25 per cent of cereals worldwide are contaminated, exposing approximately 4.5 billion people to uncontrolled toxin levels. McGlade argues for an aggressive strategy to secure food safety in both drought-prone and temperate regions.
