Rice paddies run on water buffalo muscle and rich milk
Bubalus bubalis, the domestic Asian water buffalo, likely descends from wild Bubalus arnee. River-type stock seems to have arisen in South Asia; swamp-type animals took different routes. Traders moved them from the Indus Valley to Mesopotamia by about 2500 BC, and their milk outranks cow milk in fat and protein.
Domestic water buffalo descend from wild Asian stock and now work far beyond their South and Southeast Asian heartland, turning up in Italian dairies, Balkan farms, Australian paddocks, American holdings, and African projects. Two living domestic types are recognised on form and behaviour: river buffalo of the Indian subcontinent and westward, and swamp buffalo of Mainland Southeast Asia and eastward islands.
Phylogenetics points to separate domestication stories: river animals likely from western India around six millennia ago, swamp animals independently further east within roughly three to seven millennia. Trade already moved buffalo from the Indus world toward Mesopotamia by the mid-third millennium BCE. Linnaean naming once bundled wild and tame forms; a 2003 zoological ruling keeps Bubalus arnee for wild animals and B. bubalis for domestic and feral ones.
Rice-field tillage suits their strength, and their milk runs richer in fat and protein than ordinary dairy cattle milk, which feeds cheese traditions from South Asia to Italian mozzarella supply chains. Wallowing cools heavy bodies and builds mud armour against insects. Feral herds have naturalised in several countries where escapees found wetlands.
Wild populations need wet grassland corridors that drainage projects erase, while domestic herds need veterinary and feed systems. Holding both lines in view stops the animal from shrinking to a single farm icon. Breed catalogues list many regional names, yet the river-versus-swamp split remains the first cut most handbooks teach. Wetland loss and intensive dairying pull the same species in opposite management directions across monsoon Asia and beyond.
