In short: Founded in 2003 by René Redzepi and Claus Meyer, Noma transformed the culinary world through foraging and innovation. After winning Best Restaurant in the World multiple times, the Copenhagen institution is now transitioning from a traditional dining room into a dedicated food innovation lab.

Noma's influence stems from its role as the standard bearer for New Nordic Cuisine. Rather than following classical traditions, the restaurant focuses on the interpretation of local, seasonal ingredients foraged from forests and shores. This approach earned it the title of Best Restaurant in the World in 2010, 2011, 2012, 2014, and 2021. Its unique culinary philosophy is exemplified by dishes like 'The Hen and the Egg', which features ingredients like wild garlic sauce and hay oil. This commitment to local sourcing helped the restaurant secure the top global ranking multiple times.

The restaurant's journey has been marked by significant shifts in both operation and culture. In 2023, Redzepi announced a transition away from traditional service, citing the immense financial and emotional toll of the fine-dining model. This shift follows a period of intense scrutiny regarding labor practices; while the restaurant historically relied on unpaid interns, it began paying all interns in October 2022, an move that added an estimated $50,000 to $70,000 in monthly labor costs. This transition was prompted by the unsustainable nature of the fine-dining business model. Previously, the kitchen relied heavily on stagiaires, or unpaid interns, who often worked up to 70 hours every week.

The institution has also faced serious internal controversy. In March 2026, an exposé by The New York Times reported that Redzepi had physically abused dozens of employees, with some reporting that being hit was routine. Redzepi resigned later that month, taking responsibility for his harmful actions. While the regular dinner service is concluding—with a final residency in Kyoto, Japan, ending in December 2024—Noma will continue to operate through periodic pop-up residencies and as a food innovation lab. The restaurant's physical presence has also evolved, moving from its original warehouse location in Christianshavn to its current site at Refshalevej 96. Even as regular dining ends, the brand will maintain its presence through various global pop-up residencies.
