How to transform baking soda into alkaline noodles at home
In short: By applying heat to simple baking soda, you can create a homemade washing soda. This chemical shift raises the pH of your dough, allowing you to replicate the distinct texture and flavor of authentic ramen using nothing more than flour and a few pantry staples.
The secret to the springy, chewy texture characteristic of ramen lies in alkalinity. While many recipes rely on prepared alkaline salts, Adam Ragusea demonstrates a method to create a higher pH solution at home. By heating baking soda in a pan over high heat and shaking it frequently, the substance undergoes a transformation. It initially appears slightly damp before drying into a fine, powdery state, effectively becoming washing soda.
To prepare the dough, dissolve this converted washing soda in 118mL of water, kneading it into approximately 300g of flour—ideally bread flour. After letting the dough rest for at least 15 minutes, it can be rolled into a thin 'snake' and sliced into small, ovoid shapes resembling orecchiette. Dusting these pieces with flour prevents them from clumping during the cooking process.
The accompanying broth is a layered infusion of aromatics and umami. The process begins by simmering roughly 2 liters of water with dried mushrooms, ginger, lemongrass, lime zest, and onion tops for at least 30 minutes. Once strained, the broth is seasoned with soy sauce, vinegar, and sugar, then finished with sliced carrots, onions, and chilies.
The final assembly requires careful timing. After boiling the vegetables, the fresh noodles are added to the pot for just 1 to 2 minutes. As the soup cools, any foam produced by the noodles will subside. A final flourish of sesame oil, frozen peas, cilantro, and lime wedges completes this nutrient-dense, homemade noodle soup.
