In short: The French Laundry is a global icon of fine dining, but its name is a relic of industrial history. To understand its prestige, you have to look past the three Michelin stars to a 1920s steam laundry and a 19th-century saloon.

The restaurant's physical history began in 1896, when a Scottish stonesman constructed the building as a saloon for Pierre Guillaume. By 1906, local laws around the Veterans Home of California Yountville prohibited alcohol sales, leading to a shift in the building's purpose. In 1920, John Lande purchased the property and converted it into a French steam laundry. This specific industrial use is the origin of the name 'The French Laundry.'

The transition to haute cuisine began in 1978 when Sally Schmitt and her husband Don purchased the building. Schmitt, a visionary chef, renovated the space and pioneered 'California cuisine,' focusing on local and seasonal ingredients. The Schmitts operated the establishment for 17 years until 1994, when they sold it to Thomas Keller. Under Keller, the restaurant solidified its reputation, earning three Michelin stars in 2006 and being hailed by Anthony Bourdain as 'the best restaurant in the world' in 2005.

The establishment's influence extends through its kitchen alumni, which include notable chefs like René Redzepi of Noma and Grant Achatz of Alinea. While the brand represents a pinnacle of culinary experience, it has faced modern scrutiny. In 2026, the ownership group faced lawsuits from over 50 former employees alleging off-the-clock work. These claims highlight a growing tension in the industry: the massive investment in the customer experience versus the working conditions of the staff required to produce it.

Today, the restaurant maintains its legacy by serving two distinct nine-course tasting menus daily, priced at US$425 per person. It remains a cornerstone of Napa Valley, balancing its historic 1900 building with a modern culinary philosophy that blends French techniques with contemporary American influences.
