In short: In 2021, Daniel Humm made a radical choice: he transitioned his legendary restaurant, Eleven Madison Park, to a completely plant-based menu. This move, driven by environmental concerns like climate change and overfishing, challenged the traditional foundations of Michelin-starred gastronomy and sparked a global conversation on sustainable food systems.

The transition was not without friction. In November 2021, Humm’s attempt to introduce a vegan menu at London's Claridge's was rejected due to concerns regarding customer response. Undeterred, Humm returned to New York to overhaul Eleven Madison Park. This decision proved revolutionary; by October 2022, the restaurant became the first and only plant-based establishment in the history of the Michelin Guide to receive a three-star rating.

Humm's philosophy is rooted in environmental stewardship rather than strict dietary restriction. While he is a vegetarian, he describes his approach as "pro-planet," aiming to reduce animal protein consumption rather than simply being "anti-meat." This commitment to sustainability extends beyond his menus to his philanthropic work. Through the nonprofit Rethink Food, Humm has worked to create more equitable food systems, notably during the COVID-19 pandemic when Eleven Madison Park produced up to 3,000 meals a day for underserved communities in Brooklyn and the Bronx.

The restaurant's success is underscored by its consistent accolades. Eleven Madison Park has held a three-star Michelin rating since 2017 and has been a mainstay on The World's 50 Best Restaurants list for over a decade. In 2017, it achieved the #1 spot on that list, earning it "Best of the Best" status, which means it is no longer eligible for annual voting. In September 2024, Humm's advocacy for sustainable food systems led to his appointment as a UNESCO Goodwill Ambassador for food education.
