How a former political science student revolutionized the New York City dining scene
In short: Danny Meyer transformed the restaurant industry by prioritizing hospitality over traditional business models. From opening his first cafe at age 27 to building a massive hospitality empire, Meyer has navigated high-stakes controversies, Michelin-star successes, and complex labor shifts, all while redefining what it means to serve the public.
Born in St. Louis in 1958, Danny Meyer initially pursued a path in politics, graduating from Trinity College in 1980 and working on a presidential campaign. However, his career pivoted toward food after he gained experience in New York City’s Flatiron District in 1984. By 1985, he launched the Union Square Cafe, the cornerstone of what would become the Union Square Hospitality Group.
Meyer’s approach is defined by a philosophy of hospitality that he detailed in his 2006 bestseller, Setting the Table. His influence extends far beyond the kitchen, encompassing a diverse portfolio of businesses like Shake Shack and The Modern. His establishments have earned numerous accolades, including 28 James Beard Foundation Awards and multiple Michelin stars, cementing his status as a titan of the industry.
Despite his success, Meyer has faced significant challenges. In 2015, he attempted to eliminate tipping across his restaurants, a bold move that raised menu prices by about 21 percent and resulted in substantial staff turnover. Later, during the COVID-19 pandemic, he faced intense scrutiny after his company received between $11.4 and $27 million in Paycheck Protection Program loans, despite his earlier public criticism of restaurants seeking such government assistance.
Today, Meyer remains a prominent figure in hospitality, serving on various boards and continuing to influence the culinary world through his writing and business ventures. While he has seen closures like Tabla and the North End Grill, his legacy is defined by his ability to challenge conventional wisdom, proving that the intersection of business and humanity remains a powerful, if sometimes contentious, force.
