The secret sauce behind a regional pizza brand's national rise

In short: How does a local pizzeria from Ohio become a massive international franchise? It started with a family recipe and a consultant who noticed a glaring inconsistency: while the buildings looked different, the pizza tasted exactly the same. This observation became the blueprint for a multi-state expansion.

In 1978, Italian immigrant Pasquale "Pat" Giammarco opened the first Marco's Pizza in Oregon, Ohio. The foundation of the brand was deeply personal; Giammarco grew up in a family pizzeria in Dearborn, Michigan, where he and his father developed the specific sauce recipe that remains a staple of the menu today. For years, the brand operated with a distinct regional identity, characterized by varied storefront designs across different cities. Giammarco arrived in the United States from Italy's Abruzzo region at the age of nine. The first location opened on Starr Avenue. The brand specializes in Italian-American cuisine.

The turning point came in 2002 when restaurant industry expert Jack Butorac conducted an analysis of the chain. He visited five different locations and identified a critical paradox: the branding was inconsistent, but the product quality was uniform. Recognizing the potential of this regional brand, Butorac negotiated to purchase the franchising rights. He took leadership in January 2004 with a specific mandate to scale the company nationally, leading to a rapid expansion across more than 35 states and into international markets like the Bahamas and India. Butorac received the Golden Chain award from Restaurant News in July 2017. The company's growth was recognized by Franchising World as a fast and serious franchise. Expansion reached Puerto Rico as well.

The strategy proved successful, with the company more than doubling in size under Butorac's tenure. By 2014, the chain broke into the national consciousness when Consumer Reports ranked it as the #3 best pizza chain in America. The brand has continued to grow steadily, opening approximately 80 new stores annually, and maintaining a diverse menu that includes specialty items like the Fresco pizza, which features a signature Italian pepper relish called giardiniera. The menu features items like CheezyBread and CinnaSquares. In 2016, the brand ranked tenth on the Pizza Today Top 100 list. A past partnership with Family Video even allowed for pizza delivery with movie rentals.
