How a cooking oil shop became a global Michelin-starred icon
In short: Din Tai Fung is now a symbol of culinary precision, famous for its 18-fold xiaolongbao. But before it was an international powerhouse, it was a struggling retail business facing obsolescence. The brand's survival hinged on a pivot from selling oil to mastering a rare regional specialty.
Founded in 1958 by Yang Bing-yi and his wife Lai Penmei, Din Tai Fung began as a cooking oil retailer in Taiwan. The name itself is a hybrid of their previous employer, Heng Tai Fung, and their supplier, DinMei Oils. However, the business faced a crisis around 1970 when tinned cooking oil became common, causing demand for their product to plummet drastically.
The turning point came from an unexpected suggestion by Tang Yongchang, a friend of Yang who owned a Shanghainese restaurant. Tang proposed that Yang convert half his shop into a kitchen to produce xiaolongbao—a dish common in Shanghai but nearly unknown in Taiwan at the time. The transition was so successful that by 1972, the company abandoned oil entirely to become a full-fledged restaurant.
The brand's growth has been marked by both cultural prestige and operational hurdles. In 2007, it served as a tool of Taiwanese cultural diplomacy in Paris. By 2009, its Hong Kong branch earned a Michelin star for its paper-thin wrappers and precise folding technique. Despite this success, the chain has faced significant legal scrutiny recently, including a 2024 Australian court ruling that described 'calculated' wage theft schemes and a 2025 settlement in Seattle regarding unpaid rest breaks.
Today, the company is managed by the founders' grandsons as co-CEOs. While it continues to expand into major markets like New York and Vancouver, its journey highlights a classic narrative of survival through adaptation: moving from a commodity product to a high-skill culinary craft.
