How a marshy Philippine trading hub became the undisputed milkfish capital of the world
In short: Dagupan began as a swampy, mangrove-filled gathering place for ancient traders. Today, this independent city serves as the commercial heart of Pangasinan. Beyond its bustling financial district and status as a regional transportation hub, it is globally famous for its massive milkfish industry and record-breaking culinary feats.
The name Dagupan originates from the local word pandaragupan, meaning gathering place, reflecting its centuries-old role as a vital market center. Before the Spanish arrived in the 16th century, the area was a marshland of mangroves and nipa palms. By 1583, it was incorporated into the encomienda of Lingayen. Its strategic coastal location on the Lingayen Gulf eventually made it the terminus for the first long-distance railroad in the Philippines, which opened in 1892, cementing its importance for trade and transport.
The city's economy underwent a significant transformation in the 19th century, when traditional salt-making operations in low-lying swampy areas began shifting toward aquaculture. This pivot established the foundation for Dagupan’s identity as the milkfish, or bangus, capital of the country. Between 2001 and 2003, the city produced over 35,560 metric tons of milkfish, with the vast majority raised in specialized fish pens and cages. This industry remains a cornerstone of the local economy, celebrated annually through the Bangus Festival, which famously set a Guinness World Record in 2003 for the longest barbecue grill, stretching over 1,000 meters.
Dagupan’s geography has been both a blessing and a challenge. While its river-crisscrossed landscape supports a thriving culinary scene—earning it the title Kitchen of the North—the soft, sediment-rich ground has proven vulnerable to seismic activity. A magnitude 7.7 earthquake in 1990 caused widespread liquefaction, forcing businesses to relocate temporarily. Despite such setbacks, the city has maintained its status as a regional center for education and medical services. Today, it is evolving further, identified as a high-potential site for the digital economy and business process outsourcing, ensuring its continued relevance in the 21st century.
