In short: Buffalo mozzarella is more than a culinary staple; it is a product of complex migrations and rigorous protection. From prehistoric fossils to medieval conquests, the history of this cheese reveals how geography, biology, and strict legal designations shape what we consider premium food.

The origins of the Mediterranean buffalo are shrouded in mystery. While some theories suggest they were brought by Goths during early medieval migrations, a 2020 scientific review points to an eighth-century Arab occupation of Sicily as the likely entry point for river buffalo from India. Others argue they may have originated in Italy itself, citing fossil evidence of the prehistoric Bubalus murrensis. Regardless of their start, these animals became essential draught animals because their large hooves allowed them to plow compact, watery terrains without sinking.

The cheese itself belongs to the pasta filata family, which likely originated across the northern Mediterranean—including Greece and Turkey—with ancient Latin authors documenting stretched curd techniques in southern Italy. However, buffalo mozzarella didn't become widespread until the second half of the 18th century. Its production was nearly destroyed during World War II when retreating German troops slaughtered local herds near Naples, a blow from which the industry slowly recovered.

Today, the 'mozzarella di bufala campana' designation is strictly guarded by an EU and UK protected designation of origin (PDO). This ensures the cheese is produced in specific regions like Caserta and Salerno using traditional recipes. It is a massive economic engine; in 2024, producers certified an output of 55,718 tonnes, generating over half a billion euros in turnover. Despite its prestige, the industry faced a major crisis in 2008 when dioxin contamination in certain provinces led to international import suspensions, highlighting the delicate balance between traditional farming and modern industrial safety.
